Grading System of Wagyu That Even Japanese People Don’t Know
What is the Beef Marbling System (BMS)?
Even within the A5 grade, there is further classification known as the Beef Marbling System (BMS). This system, often referred to as "BMS," evaluates the quality and distribution of marbling (fat).
BMS is graded on a scale from 1 to 12, with 12 being the highest rank. Currently, about half of all Wagyu is classified as A5 grade, and within that, BMS ranges from 8 to 12. However, Wagyu with a BMS12 grade accounts for only a few percent of all Wagyu, making it extremely rare.
Exceptional Rarity of BMS11 and Above
Wagyu with a BMS grade of 11 or higher is quickly sold at wholesale to high-end restaurants, luxury hotels, or for overseas markets. As a result, it almost never appears in regular retail stores. When thinking of places to buy premium Wagyu, the meat section of department stores might come to mind, but it’s unlikely you’ll find A5-grade Wagyu with a BMS12 grade there.
